IDIYAPPAM / STRING HOPPERS






Good day friends….I had my lunch right nw,usually I start my lunch with rice & fish, but today it was the soft and tasty IDIYAPPAM instead of rice.Today I was slightly busy that’swhy I make idiyappam and egg roast. Here is the recipe.you can make soft idiyappam within 15 minutes..

Ingredients
Rice flour – 1 ¼ cup
Hot water – 1 cup
Grated coconut – ½ cup

Method
Boil water with salt. Pour the rice flour in to the boiling water and mix thoroughly and make a soft dough. Mix well until the dough became soft. Fill  the mix in the idiyappa achu / presser,and press it on to the idili steamer. Add grated coconut on top of the idiyappam.Steam for 10 minutes.  Tasty &soft idiyappam is ready to serve. LADDHU


Happy Diwali to all my friends..Sorry for the late posting..
I made a sweet evening to u all…how we can imagine Diwali without sweets.. I get the laddhu recipe from one of my ex.colleague, she is from Chennai.so I tried the recipe on yesterday night. It came out very well. Absolutely stunning…here is the recipe…just try it out..


Ingredients
Basin/ Kadala mavu – 500 gm.
Rice flour – 2 tbsp.
Sugar – 500 gm.
Ghee – 1 tbsp.
Oil – for frying
Kesari powder – ¼ pinch
Salt – a pinch
Cashew nuts – 50 gm. (roasted)
Raisins - -25 gm.  Roasted
Cardamom- 10 /15
Cubed Sugar /Kalkandam – 25 gm.


Method

Take a bowl with basin/ kadalamavu along with salt, ghee and rice flour. Make a thick batter u can add 2/3 tbsp to 1/2 glass of  water. Don’t add more water. Heat a kadai with oil , take a boondi plate( u can bought it from the grocery shop)spread the batter in the plate and drop in to the kadai.nw u can see the boondies floating in the oil. Stir it very slowly until the boondies are cooked. Then drain from the oil. Keep it aside.


Now the time for making  the sugar syrup. Its not a big deal friends. Take a pan with 1 cup of water, when water is became hot add the sugar and make a thick syrup. Add the kesari powder and boondies in to the syrup. Soak the boondies in the syrup for 5 minutes. Then add the roasted cashewnuts and raisins. Mix all the ingredients well. Finally add the cardamom and cubed sugar. Allow the mixture in to a room temperature.
Make a even balls and allow to cool. Now the tasty and delicious south Indian laddhu is ready to serve..

UZUNNU VADA

Good evening friends..
                                      Im sharing one more "vada "recipe for  all.....vada is a traditional south Indian dish, it can be eaten for any time.we all loves uzunnuvada with dosa sambar combination..its really yummy  and delicious..ck out the recipe..


Ingredients
Urudal dal /Uzunnu parippu – 1 cup
Green chilies – 2/3  chopped
Ginger – 1 tbsp. chopped
Shallot / small onion/ cheriya ulli -5 /6 chopped
Pepper corns / kurumulaku – 5 /6 crushed (optional)
Baking soda – ¼ tsp.
Salt – to taste
Oil – for frying


Method
Soak the dal for 6 hours and drain it.Grind with salt. Do not add water. Make in to a smooth paste. After taking the mixture from the blender add chopped green chillies,ginger, small onion and pepper corns & baking soda .Mix well .If u really want extra soft vada, keep the mix in the refrigerator for 20 minutes. After 20 minutes take the mix and make a small balls flatten each balls and make a hole in the center. Wet your hands when making the vadas,its helps you avoiding the stickness.Heat the oil in a kadai with medium fire.Deep fry until the colour became golden brown.Serve hot with sambar / cocount chutney.

Parippu vada / Lentil vada


Good day Friends........
Today im quite happy becoz, this dish is very popular among keralites.our own parippu vada / lentil vada.Its an ideal snack for the rainy season with hot coffee..Ohh..My friends,.this is remembering me in my college days ?????(Every evening we bought spicy and hot parippu vada from the canteen...i really miss my lovely friends...missing u very badly guys..).I dedicate this recipe to u all. ..


Ingredients
Chana dal - 1 cup
Onion - 1 chopped
Red chilies - 4 /5
Green chilies’ - 2 small
Ginger - 1 tbs chopped
Cumin seed - 1/2 tsp.
Curry leaves - 2 string
Turmeric powder - 1/2 tsp.
Salt - To taste
Coconut oil - For deep frying.


Method
Soak chana dal for 30 minutes, and grind with red chilies and salt. Grind them coarsely. Dont add water.Take the mix from the blender, add turmeric powder, chopped onion, green chillies,chopped ginger ,cumin seed and curry leaves. Mix well. Make a small balls of the mixture and flatten it in the palm of your hands. Deep fry in coconut oil until the vada became golden brown....Serve hot with coconut chutney or coffee.

ETHAKKA APPAM (PLANTAIN FRITTERS)


Ethakka appam /vazhakka appam is very common evening snack in Kerala. Its my favorite snack since my childhood...yesterday I bought some ripe plantain from grocery and i make ethakka appam .
If u really like ethakka appam here goes the recipe. Just try it out..u can make it within a minutes...


Ingredients

Ethappazham/Ripe plantain
All-purpose flour /Maida - 1 cup
Rice powder - 2 tb.spoon
Sugar - 1 tsp.
Cumin seed - 1/2 tsp.
Turmeric powder - 1/2 tsp.
Salt - to taste
Coconut oil - for deep frying (for authentic taste )

Method

Take a bowl and mix all the ingredients well..( except plantain..).add some water , and make a thick batter. Cut the plantain in long thin size. Heat oil in a pan /kadai, dip the plantain in the batter and fry until the color became golden brown. Drain on paper napkins & serve hot with tea / coffee.

Mix Vegitable Spicy Cutlet




Good day friends.............
Actually I’m planning to share more veg.dishes and snacks for coming weeks coz all of my UAE friends ask me that why don’t u share Indian snacks recipes for us??.    Yaaa..Why not..??..Cutlet is very common snack in India especially in Kerala .whenever having cutlet I used to think who prepared this awesome recipe?.Today I make a mixed vegitable spicy cutlet for u ..Here goes the recipe..just try it out..


Ingredients

Green chilies’- 3 /4 chopped
Ginger - 1small size chopped
Big onion - 1 big
Carrot - 2 medium sizes chopped
Beet root - 1 small
Beans - 250 gm.
Potato’s - 3 medium size boiled and smashed
Chicken masala - 2 tsp.
White pepper powder - 1/2 tsp.
Turmeric powder- 1/2 tsp.
Curry leaves - 2 strings
Cornflakes / bread crumbs - 1 small cup
Egg white  - 2
Salt - to taste
Veg.oil- for frying

Method

          Heat the pan with 2 tab spoon oil ,after heating the oil add chopped green chillies,ginger and chopped onion sauté it well for few minutes.Then add the chopped carrot, beans and beetroot, fry until just tender the vegitables. Now u can add the masalas/spices & chopped curry leaves. gently mix all the ingredients well,,saut it for 1 or 2 minutes. Then remove from fire once it begins to cool add smashed potatos.Then roll to evenly sized balls and press on palms for round or oval shaped cutlets.
Beat the egg white. Dip the cutlet in the eggwhite and then roll with cornflakes/ bread crumbs. If u r using cornflakes grind the cornflakes with a blender for 2 seconds. Finally deep fry to a golden color...
Serve hot with  ketchup.

BEETROOT WINE





Hi friends..welcome back my kitchen....today i share one more wine recepie for u...Beetroot is a rich source of potent antioxidants and nutrients...so i made wine with beetroot.Actually i gt the recepe from one of my aunt.she is very passionate in cooking..here goes the recepie..

Ingredients

Beetroot - 5 kg
Water - 12 Ltr.
Sugar - 4 kg.
Cinnamon - 1 small piece (crushed)
Cloves - 3 nos (crushed)
Yeast - 1 spoon.
Glass gallon Jar -1

Method

Chop the beetroot very fine. Boil the beetroot with water for 15 minutes. Let it cool for some time. Then strain the beetroot from water. Pour the mix in to a nylon straining bag .Tie the bag and squeeze it well. Take a glass gallon jar put the the  beetroot mix  and all other ingredients in to it (Sugar,. Crushed Cinnamon and Cloves). Finally add the yeast and genly mix well. Keep the jar in a warm place for 5 days. You can gently stir the wine for everymorning (once in a day) .after 5 days u can strain the wine. Store the wine  in clean dark bottles.Simple & Easy Beet root wine is ready to serve....

Prawns Fry

Hi friends...Today i make something  special dish for u..
Prwans fry is really spicy and yummy dish.This dish.is  delicasy for all the keralites.(me too..)

Ingredients

Prawns - 500 gm.
Tamarind or Kudam puli - 5 cloves
Green chillies - 5 no’s
Ginger - 1 small pieces (chopped)
Turmeric powder - 1/2 tsp
Coconut - 1/2 cup
curry leaves - for taste & garnish
Salt - to taste


For final Frying/ Seasoning
Coconut oil - 2 table spoon
chilli flakes - 1 1/2 tsp.
Onion - 1 small chopped
Green chilli- 3/4
Small onion - 8/10
Ginger- i small pieces chopped
Garlic - 3 cloves (smashed)
Curry leaves - 1 or 2


Method
                    Boil prawns with all the  ingredients (Tamarind/kudam puli,greenchillies,chopped ginger, turmeric powder,cocunt,curry leaves and salt. mix it well. Boil the prawns for 15 minutes.dont cook for long time(otherwise prawns became hard ).

 Now its time for final garnishing/frying. Take a pan ,heat the pan with coconut oil, after heating the oil add chili flakes, sauté it well .cook in slow fire add the chopped onion, green chillies,small onions, ginger, curry leaves,and chopped garlic. Mix all the ingredient’s..for 2 minutes. Finally add the boiled prawns...blend it well. Serve hot with rice/ kappa.

GRAPE WINE




Good day friends...........

I had my coffee just nw.. Today i will share you a something really special recipe it’s all about wine. We all like all kinds of wine. It’s not a big deal friend. Just try it out for one time .today i make grape wine..

                                                                         Ingredients

Black grapes - 2 kg 

Sugar - 1 kg (dissolved in warm water)

Luke warm water - 3 cups

Dry yeast - 1/2 tsp.

Glass gallon jar - for preserving

Method

Take a glass gallon jar. Put the clean  grapes, (mash it slightly) and all the other ingredients like sugar,luke warm water, dry yeast in to the jar. Mix all the ingredients well. Stir your wine again till the yeast has dissolved the mixture. Cover the jar with cotton cloth. .Place the jar in a warm place for 14 days. (You can stir the wine for first 7 days. Gently stir the mix) after 14 days remove the cloth and strain the wine. Due to fermentation it will look like the wine boiled and settled on top. Strain this off the top and pour the reaming wine to the bottles.  Your black grape wine is ready..Now.

Bread Burjji

 


                                             
Today i make Bread burjji for you.
 This dish is very popular in north and western India. Now the "taste "common in south also. Actually its a yummy dish for your tea time.(u can make it your breakfast as well )
This is very Simple Recipe...... any one can make within a minutes i think it’s ideal for bachelors...........rit??????
Ingredients 
 Egg - 2/3
Bread slices - 6slizes (cut in square pieces)
Green chilies - 3
Tomato’s - 2 small( finely chopped )
Ginger - chopped
Onion -1 big (finely chopped)
Turmeric powder - 1/2 ts
Oil - 1 table spoon
Chilly powder -1/2 tsp
Chicken masala powder/ garam masala - 1 tsp.
Pepper powder 1/2 tsp
Salt - to taste
Method 
         
                      In a large frying pan heat the oil with medium fire, add the green chillies,chopped ginger and chopped onion.
Fry until just transparent.Then add the tomato’s and fry some more,add all the spices and mix it well.
Add the beaten eggs,and salt  and keep scrambling until the mix is dry.
 Finally add the bread peace mix it well ... turn off the fire.
 Now the bread burjji is   ready to serve ....

Spanish Omlet


This is my first recipe for all of you...Today im making Spanish omlet ...                                                  its really tasty and very easy to prepare..
you can make it within a minutes..simple and delicious

Ingredient's :  red capsicum - 1 small
                      green capsicum - 1 small  
                       yellow capsicum -1 small   (all the capsicum slice as thinly as u dare)
                                                             butter mushrooms -2 (finely chop )
                                                              egg white -3
                                                              salt & pepper - to taste
                                                              butter/ Olive oil - for frying
Mix all the  first 6 ingredients and beat it well, till the colour become pale white..then heat the pan with slow fire, add the butter/ oil then pour the mixure to the pan..fry for around 3 minutes.Dont let it get brown.The tasty spanish omlet is ready now.GentlyTransfer the omlet to a plate. serve it  hot with milk/ brown bread.
