Mix Vegetable Thoran / Vegetable Stir Fry
Good Day Friends....Todays recipe is "Mix Vegetable Thoran "
Thoran is a common dish in kerala cuisine ,its a dry dish traditionally made of seasonal vegetables like Pacha payar (Yard long beans)Red spinach(cheera), Padavalanga,Pavakka,Pacha Ethakka etc,.I usually make thoran with CABBAGE ,CARROT AND BEANS bcoz i loved to eat thoran with fish curry and rice.So here goes the recipe..

Cabbage -  1 small (shredded)

Carrot- 1 Chopped

Beans- 1 small cup chopped

Green chillies- 2/3

Big onion- 1 chopped

Coconut - 1 cup

Mustard seed 1/2 tsp

Turmeric powder - 1/2 tsp

Coconut oil- 2tbs

Salt
Preparation
Take a bowl and mix all the vegetables with shredded coconut and green chillies.Heat a kadai with oil and splutter the mustard seed ,then add the vegetable mix to the pan,stir for a minute,add 1/2 tsp turmeric powder and salt.Mix all the ingredients well.close the pan with a lid reduce the flame and allow to cook for 10 minuts.

Finally add some curry leaves,the tasty and nutritious mixed vegetables thoran is ready to serve.

Meen Peera / Fish with Grated Coconut



Travancore special Meen Peera / Fish with Grated Coconut
Good Day friends........

                            Welcome back my kitchen, todays recipe is Travancore special Meen peera.    Here goes the recipe.Just try it Buddies..nd make ur day something FISHHY.......



Any Kind of Small fish/ (I prefer Small Sardine / Netholi )

Shallots / Kochulli -   10 sliced

Ginger- An Inch piece (crushed)

Kudampuli-3 /4 (Soaked)

Green chillies - 2/3 sliced

Turmeric powder - 1/2 tsp

Grated Coconut - 1 cup

Coconut oil - 1 tbs

Garlic - 1 pond (crushed)

Curry Leaves - 2 stems

Salt- to taste

Water - as required


Preparation

Take a mud vessel or kadai( i normally use traditional mun chatty), Mix fish with shallots,ginger,green chillies,kudam puli,garlic,salt, curry leaves,turmeric powder and grated coconut.mix all the ingredients  well ,finally add 1/2  cup of water to the mix.

Heat pot with medium flame and cover with lid ,and allow it to cook for 15  mints until the water is evaporated.Finally pour coconut oil on top of the curry.Mix well.

The tasty Travncore special Meen peera is ready to Serve.

APPAM / PALAPPAM





Good day Friends.......
                               Welcome back my kitchen....Today im sharing u one more kerala recipe."Appam" is very common breakfast dish in kerala cuisine,normally it serve with chicken stew/ egg roast. I like the combination with egg roast.So here goes the appam recipe , just try it out...
(Its  not a big deal friends.......CHERRS..")


Ingredients


Basmati rice - 2 cups
Cooked rice - 1/2 cup
Grated coconut - 1 cup
Sugar - 1 tbsp
Yeast - 1/2 tbsp
Salt
Water


Method


Wash the rice and Soak For 6 hrs&grind it along with choru and grated coconut,make a thick batter..Then take a bowl and mix the yeast with 1/4 cup of water & sugar. mix it well.add the yeast mix in to the batter and stir it well.keep the batter overnight for fermentation.
Heat oil in a appa chatty with slow fire and pour one spoon of batter and cover the lid and cook for 1 minutes..
Serve hot with Mutta curry (Egg Roast)/ Chicken stew

GOBI MANCHURIAN



Good Day Friends..
                         Today I'm sharing you one more delicious recipe that is "Gobi Manchurian" .
I knw that all of u like this dish very much.Yesterday i gt some fresh cauliflower from Carrefour store so i decided to prepare Gobi Manchurian. ..it came out very well..& the taste was so Yummy .Here goes the recipe , just try it out...


Ingredients

Cauliflower - 1 (cut into medium sized florets)
Red onion - 1 Big chopped

Garlic - 1 or 2 cloves chopped

Ginger - A small peace chopped

Green chillies - 1 or 2 chopped

Soya sauce - 2 1/2 tbsp

Hot chili sauce - 1 1/2 tbsp

Tomato sauce -2 tbsp

coriander leaves

spring onion

salt

oil



For the BatterMaida - 1/2 cup

Rice flour -1/4 cup

Red chili powder - 1/2 tsp

Salt


Method

Cut the cauliflower into medium sliced floret and boil with hot water along with a pinch of turmeric powder & salt (don't over cook,just boil only).Remove from fire and drain it well.
Then take a bowl mix flour with salt, chili powder& salt , make a thick batter.
Dip each florets in the mix and coat it well..keep aside for 10 minutes .Heat oil in a pan and gently put each florets in to the oil.Deep fry until it turns Golden brown.Drain in to a tissue paper and allow it cool.

Take a pan, heat oil with slow fire and add chopped onions,ginger,garlic & green chillies..saute it well until its tender and soft. add soya sauce ,chili sauce , tomato ketchup& a 1/4 tsp of salt .

Mix all the ingredients well..
Finally add the fried Gobi florets in to the pan  & gently saute for 5 minutes .Remove from fire and garnish with spring onions&coriander leaves.Serve hot with Chapati/Butter Nan.

Moru Kachiyathu



Ingredients
Butter Milk - 1/2 Lt
Chili powder - 1 tsp
Turmeric powder - 1/2 tsp
Mustard seeds - 1 tsp
Fenugreek seeds (Uluva) - 1/2 tsp
Ginger - 2 tsp (chopped)
Garlic - 2-3 nos (chopped)
Shallot - 4/5
Dry chillies - 2/3 nos
Coconut oil - 3tbs
Curry leaves
Salt    - to taste

Method

Beat curd with salt.Heat oil in a Pan/ Mun chatty with slow fire, add mustard seed after splutter it put 1/2 tsp of fenugreek seeds(oluva)..saute it well, add chopped ginger,garlic,shallots , dried red chillies and curry leaves fry it till the colour became golden brown.Then add chili powder and turmeric powder mix well for a minute. Reduce the fire and add  Butter milk,stirring continuously until its warm(don't let it boil).Remove from the fire and serve with rice.

Mulakitta Meen Curry



Good Day friends....
                                                     Today's recipe is something really really "HOTTT"..?????
Heyy im just kidding Buddies....its our own Mulakitta Meen Curry.This dish is very common in Central Travancore especially in Kuttanadu ,its also known as (Vallakkarude Meen Curry).
I prepare this dish every weekend coz my hubby loves its very much..& me too....
So here goes the recipe...just try it out and make Ur day "SOMETHING HOT..."




Ingredients


King Fish - 1/2 kg
Chilli powder - 2 tbsp
Corriander powder - 1 1/2 tbsp
Turmeric powder - 1/2 tsp
Ginger - an inch piece chopped
Garlic - 2/3 cloves
Shallot - 8 -10
Green chillies - 2/3 nos
Mustard seeds - 1 tsp
Fenugreek (Uluva) - 1/2 tsp
Tamarind(kudam puli) - 3/4 pieces
Coconut oil - 3tbs
Curry leaves
Water
Salt

Method 

Clean the fish and cut in to medium slized pieces.Soak Tamarind and keep it aside.Mix all the spices and make a thick paste .

Heat oil in a Mun chatty or a kadai with slow fire add mustard seeds, after splutter it put 1/2 tsp of fenugreek seeds(oluva).. saute it  well.

Then add chopped ginger,garlic,green chillies and shallot..saute till it becomes tender and soft.
Now you can add the spicy masala paste ,saute for 2 minutes then add 3 cup of water in to the mix along with kudam puli and salt.
When the gravy start to boiling add fish pieces and gently mix all the ingredients together.
Cook for 20 minutes with medium flame,finally add some curry leaves and 1/2tsp of cocount oil.....remove from heat & serve with KAPPA/ KUTHARI CHORU/APPAM.

Nadan Fish Fry (Kottayam Style)

                                                             Today's recipe is Something really special and Some thing really"Fishyyyyy.."I knw that all of u like this dish very much, coz how we can eat choodu choru without Meen Varuthathu..?
So try this recipe and make Ur day something " Fishyyy"...............

Ingredients

King Fish Steaks - 5 - 6 medium size
Chili powder - 1 1/2 tsp
Turmeric powder - 1/2 tsp
Pepper Corn/ Pepper powder - 1/2 tsp (i used fresh pepper corns paste)
Garam Masala - 1/2 tsp (this is the taste booster for the fry )
Coconut Oil
Salt
Water

Method

Clean the fish and drain it well.Mix all the spices and make a thick paste.You can add 2tbs water if u need,must be careful should not make the gravy watery.Marinate the fish with this spicy masala.(don't worry u can use Ur hands for a better marination).keep aside for 30 minutes or u can keep the fish in a  refrigerator.
Heat the oil in a pan with slow fire and and shallow fry for 10 to 15 minutes..,if u want more crispiness u can fry it for another 5 minutes.Finally sprinkle the curry leaves on top of the fish and remove from the fire.Serve hot with rice and kachiya moru..

Clam Fry / Nadan Kakka Irachi Fry

Thanks for your comments and suggestion about my old post (Nadan Beef Roast).I hope all of u tryed it well.
Today im sharing you one more mouthwatering recipe .This is something really really delicious.That is kumarakom special "KAKKA IRACHI FRY ,".this dish is very common in all coastal ares especially in Alappuzha,i got this recipe from my mother-in-law, she is very expert in nadan cooking..
Here goes the recipe...just try it out

Ingredients

Clams/ Kakka irachi - 250 gm
Shallots / kochulli - 1/2 tea cup
Garlic  chopped - 3 /4 cloves
Ginger - An intch piece
Turmeric Powder - 1/2 tsp
Chili powder - 1 tbs
Pepper powder - 2 tsp
Garam masala powder - 1 tsp
Coriander powder -2tsp
Salt
Water

For dry fry
Coconut oil
coconut cuts (thenga kothu) - 1 tea cup
Mustard seeds
Curry leaves


                                                                                                                                                               Method

Clean the clams and wash it very well (at least 5/6 times ).Then boil with hot water for 15 to 20 minutes in a mud vessel (Mun chatty) .If u don't have the vessel you can pressure cook the clams .Rinse the boiled clams in cold water and drain it well.keep aside and let it cool .
Then  Marinate the clams with all the spices like (chili powder, garam masala powder,turmeric powder ,coriander powder and shallots, ginger,garlic and salt) mix it well ( add 1/4 cup water if needed),and keep it for 20 minutes.
Take a kadai  and heat the coconut oil ,add mustard seeds, when its splutters, put the marinated kakka irachi into it and saute  it well.
Fry it with a slow fire,saute till it dry and brown.Finally add the coconut cuts and curry leaves.Serve warm with rice.

Nadan Beef Fry/ Beef Ularthiyathu

Let me wish u all a very HAPPY X MAS & PROSPEROUS NEW YEAR..


Today im sharing you my all time favourite recipe "Nadan beef Ularthiyathu.."This recipe is absolutely stunning...We prepared this  dish for every Xmas, and it serve with rice ,kachiya moru ,cabbage thoran and mulakitta meen curry.." 
 This dish is very common in Central Travancore..especially in Kottayam / Kanjirapally/ Pala area.Here goes the recipe..just try it out..and put ur comments




Ingredients:-
Beef - 1 kg
Red chili Oil powder - 2 table spoon
Turmeric powder - 1/2 tea spoon
Coriander powder - 1 table spoon
Garam Masala - 1 ½ tea spoon

Garlic chopped - 5-6 cloves
Ginger chopped - An inch piece
Salt – To taste

To dry fry

Coconut Oil – ½ Cup
Coconut cuts ( thenga kothu) - 1/2 cup
Medium size Onion  Sliced  - 4/5 nos

Curry Leaves – 3-4 strings


Method:
Marinate the beef cubes with all the spices like ( chili powder,coriander powder,turmeric powder,garam masala ,ginger,  garlic and salt) and keep it for 2 hours.
If you are keeping it for more than an hour,keep it in a refrigerator.
After 2 hours you can pressure cook the marinated beef with ½ glass of water for 3-4  whistles with medium flame..keep aside and let it cool.


For Frying
Heat oil in a pan or kadai with low flame & add the fried coconut cuts , fry it for 1 minutes,and take it from the pan and keep aside..
Then add the sliced onion and few curry leaves.saute it well , until the onions became golden brown.
Finally add the cooked beef and Cook  for  30-45 minutes , stirring in between , drizzle coconut  oil if needed and let it brown and dry .Finally add the coconut cuts and curry leaves.
Mix it well .Now the  NADAN BEEF FRY / BEEF ULARTHIYATHU is ready to serve
Serve it  with Rice/appam/ Parotta…or whatever you want

IDIYAPPAM / STRING HOPPERS






Good day friends….I had my lunch right nw,usually I start my lunch with rice & fish, but today it was the soft and tasty IDIYAPPAM instead of rice.Today I was slightly busy that’swhy I make idiyappam and egg roast. Here is the recipe.you can make soft idiyappam within 15 minutes..

Ingredients
Rice flour – 1 ¼ cup
Hot water – 1 cup
Grated coconut – ½ cup

Method
Boil water with salt. Pour the rice flour in to the boiling water and mix thoroughly and make a soft dough. Mix well until the dough became soft. Fill  the mix in the idiyappa achu / presser,and press it on to the idili steamer. Add grated coconut on top of the idiyappam.Steam for 10 minutes.  Tasty &soft idiyappam is ready to serve.
